By chance, we are lucky: the boat that takes us 20 minutes to Jones Bay’s leaves outside our accommodation. After a renovation of a million dollars, the villages of Baird Bay Bay by the seaside are not only the newest host in the region, but the most luxurious in this southern part of Australia.
The two villas of the earth with the Earth can be contracted separately or together and operate in a Safari accommodation model, with a rate with all included covering all meals and drinks, as well as an extensive activity program. In addition to being closely with marine mammals, you can take an electronic bike ride or kayak, go hiking, take a surf class, go out on a fishing letter or visit an oyster farm.

“Our guests are not spectators, they are participants,” says Brendon Bevan, who directs the accommodation with his wife, Kat. “It really changes the experience when you take people and let them get wet and their hands dirty, when you show them how something has taste and smells.”
Some of the most memorable experiences are the simplest. A picnic by the border on the region’s spectacular beaches, which unfold for 70 kilometers along the coast, is a guaranteed highlight.

The two villas have seven rooms between them, making them ideal for family groups, but the exclusive reserve system means that even if you are traveling as a couple, you can book an entire villa at the same cost per person as a larger group.
A tip: When you assemble your program, be sure to build in the time of inactivity. The scenario itself is ridiculously calm, looking across the bay, where large flocks of pelicans gather, but the secret weapon of Baird Bay Seaside Villas’ is his chef, Calvin von Niebel.

Do not let von Niebel’s unpretentious behavior deceive you. This man has some serious culinary chops. He was an executive executive of the Yotam Ottolenghi culinary empire group – and his sophisticated and simple menus are among the highlights of our stay.

“Our guests are here to try nature, so food reflects that,” he says. Your menu can include crab dumplings made with streaky bay blue crabs, Whiting captured in front of the accommodation and blue tuna ceviche -Sceale Bay Bay.
Sitting next to a seaside bonfire, celebrating with fresh smoke oysters of the sea, covered with Nam Jim as the sunset paints the sky and sea in rich gold: now it’s a real banquet for the senses.
